Gatte ki Sabzi Recipe is a traditional Rajasthani Dish, here this Gatte means Gram Flour (Chickpeas) Dumplings which are boiled, then slightly fried and added to the dish. For Besan Gatte (Gram Flour Dumplings)
1 cup besan (gram Flour)
A pinch of Baking Soda
1 tsp salt
½ tsp carom seeds (ajwain)
½ tsp turmeric
½ tsp red chilli powder
½ tsp cumin powder (jeera)
½ tsp fennel seeds powder (saunf)
1 tsp coriander powder
½ tsp ginger paste
½ tsp green chilli paste
3 tsp fresh cream
3 tbsp fresh curds (dahi)
For Gatte ki Gravy
1/2 teaspoon Mustard Seeds
1/2 teaspoon Cumin Seeds
A pinch of Asafoetida
1/2 tbsp finely chopped Ginger
1 Green Chilli, finely chopped
1 medium Onion, finely chopped
1 tsp Coriander Powder
1/2 tsp Red Chilli Powder
1/2 tsp Garam Masala Powder
1 small tomato chopped
1/2 cup Curds (Yogurt)
2 tbsp Ghee / Oil
salt to taste
Coriander Leaves Chopped for Garnishing
Make Gattes (Dumplings)
1Mix the ingredients in Besan Gatte and sieve it to soft dough, it necessary extra curds.
2Divide the dough into equal balls, grease your hand with oil and then roll each ball into 1 inch cylindrical shape
3In a pan boil some water and then add these gatte (dumplings) and boil them to nearly 10 - 15 minutes or till they float up
4Then remove them from water and cut the gatte (dumplings) into 1/2 inch pieces, and keep the water aside.
5Take 1 tbsp oil and shallow fry these gatte (dumplings) till they become light brown.
Making Besan Gatte ki Sabzi Gravy
1Take 1 tbsp oil and heat it and in the pan and then add mustard seeds
2When the msutard seeds starts crackling add Cumin Seeds, Asafoetida, chopped Ginger and finely chopped Green Chilli and saute it for 20 - 30 seconds.
3Then add the chopped onions and fry till they become transparent.
4Then add the masalas Coriander Powder, Red Chilli Powder, Garam Masala Powder and fry for another 30-40 seconds
5Then add the curds and cook till the oil seperates (approx. 2-3 minutes)
6Then add 1 cup water that was kept aside with salt and bring to boil .
7When it starts boiling, add the gatte (dumplings) to it , cook it for 3-4 minutes. More water can be added.
8Then the Rajasthani Gatte ki Sabzi is ready, Garnish it with chopped coriander leaves and serve these dumplings with rotis, parathas, phulka
