Goan Pork Sorpotel

Goan Pork Sorpotel Recipe is a very common Goan sorpotel cooked at weddings, parties, festivals and different occasions. It is always better to cook 1 or 2 days before the occasions and then serve, to get better taste. All people in Goa love to cook sorpotel for any occasion, all it is the best tasty Goan Sorpotel Dish.

Ingredients for Goan Pork Sorpotel
1 kg Pork
1/4 kg Liver (pork liver / beef liver)
3 large onions finely chopped
1 tbsp sugar / jaggery for taste
6 tbsp cooking oil
4 inch Cinnamon stick
2 tsp Cumin seeds
20 Red Kashmiri Chillies
18 Black Pepper Corns
6 tbsp ginger garlic paste
22 Dry red Kashmiri chillies (for the red color)
1/2 tsp tumeric powder
2 tbsp tamarind extract
Vinegar (as required to grind paste)
Directions for Goan Pork Sorpotel
1Lightly roast the dry ingredients in grinding and then grind them with other ingredients in grinding and keep aside.
2Rinse the jar used for grinding with water and keep the water aside.
3Boil the pork and liver in water on low heat for about 20 minutes with 1 tbsp vinegar and drain the water and keep aside
4Chop the pork and liver to small cubes.
5Heat the oil and fry onions till they become golden brown
6Then add the sorpotel grinded masala and fry for another 3 minutes.
7Then add the meat that is kept aside and fry well for another 4 minutes
8Add the water that was kept aside and the grinding water with the sugar / jaggery and mix well
9Cook on low heat till the gravy thicken for about 30 to 40 minutes
10Taste it and add vinegar or sugar as required
11Cook for another 5 minutes and the Sorpotel is ready
It is better to keep the cooked sorpotel for atleast 1 day before serving to get better taste.
