Hot and Sour Vegetable Soup is very Common and tasty soup recipe ordered as starters in Indian Restaurants and is commonly known as Indo Chinese Soup. Many vegetarian people order this hot and sour soup before ordering their main course meal. If you want you can also add your own vegetables finely chopped to make the soup more tasty.
1 tbsp Ginger finely chopped
1 tbsp Garlic finely chopped
1 Onion medium finely chopped
1 Green Chilly finely chopped
1 big Carrot finely chopped
1 cup Cabbage finely chopped
4 French Beans finely chopped
1/2 Capsicum finely chopped
3 tbsp coriander leaves finely chopped
1 tsp Soya Sauce
2 tbsp Tomato Ketchup
2 tsp Vinegar
1 tbsp Green Chilli Sauce
Green Chilli Sauce – 1 tblspn
Salt and Pepper to taste
1 tsp Sugar
5 cups Vegetable Stock
1 tbsp cornflour dissolved in water for thicker consistency
1 tbsp Oil
1Heat oil in the pan, then add the ginger, garlic, onions and chillies and cook for 2 mins.
2Add all the chopped vegetable and continue cooking for another 5 minutes
3Next add all the sauce and mix well
4Then add the vegetable stock, salt, pepper and sugar and mix well cook for another 2 to 3 mins.
5Finally stir the cornflour dissolved and add to the soup and cook till it gets thicker according to your need.
6Serve hot and sour vegetable soup hot with coriander leaves sprinkled
