Ingredients for Mughlai Chicken With Almonds
2 eggs beaten with salt and pepper
4 chicken breasts, rubbed with little garam masala
6 tbsp ghee
1 large onion, finely chopped
1 piece fresh ginger, 2 inch finely chopped
4 garlic cloves, finely crushed
4 garlic cloves
4 green cardamon pods
1 piece cinnamon stick, 2 inch long
2 bay leaves
15-18 strands of saffron
2/3 cup yogurt beaten with 1 tsp conflour
salt to taste
5 tbsp heavy cream
50 gms ground almonds
Directions for Mughlai Chicken With Almonds
1Brush the chicken breasts with the beaten eggs. In a frying pan, heat the ghee and fry the chicken. Remove and keep warm.
2 In the same ghee, fry the onion, ginger, garlic, cloves, cardamons, cinnamon and bay leaves.
3 When the onions turns golden, remove the pan from the heat, allow to cool a little and add the saffron and yogurt. Mix well to prevent the yogurt from curdling.
4 Return the chicken mixture to the pan and gently cook until the chicken is tender. Adjust the seasoning if necessary.
5 Just before serving, fold in the cream and ground almonds. serve hot.
