1 whole chicken with skin (approx 1 kg)
1 tsp black pepper powder
3 medium sized potatoes cut into quaters
Roast Chicken Marination
4 tbsp ginger garlic paste
1 tsp red chilli powder
1 tsp black pepper powder (freshly grounded)
1/2 tsp turmeric powder
1 lime (juice)
oil for making the paste
1Remove the all the unwanted internals from the whole chicken.
2Nicely wash the whole chicken from both inside and outside very well.
3Mix the Roast Chicken Marination ingredients with the necessary oil to make smooth paste
4Brush the chicken skin with oil and pepper
5Apply and rub the mixed ingredients on the chicken and inside the chicken very well
6Keep it in the fridge, covered with foil for atleast 4 hours (or overnight)
7Preheat the oven 200 deg C for atleast 10 mins
8Place the chicken on the roasting tray with potaotes, and pour the juices of the mariantion left and brush more oil to the chicken.
9Reduce the heat down to 180 deg C
10Cook the chicken for about 1 hour 15 minutes, by basting and flipping the chicken when it reaches halfway.
11Continue cooking till the skin becomes golden brown.
12Goan Roast Chicken is ready and it can be sliced and served with salad or fried potatoes and served as a side dish.
