- 6-7 ripe tomatoes (about 800 g), quartered
- 1 small onion, sliced (optional)
- 3-4 garlic cloves, sliced
- 1 inch ginger piece, sliced
- 1 green chili, slit (optional)
- 1 tsp cumin seeds
- ½ tsp Kashmiri red chili powder (for color, mild spice)
- ¼ tsp turmeric powder
- ½ tsp freshly ground black pepper (optional for extra heat)
- ½–1 tsp sugar or jaggery (optional, to balance acidity)
- ¼ tsp garam masala
- ½ tsp kasuri methi (dried fenugreek), crushed (optional)
- 1 tbsp butter or ghee (use oil for vegan)
- 2–2½ cups vegetable stock or water
- ¾–1 tsp salt (to taste)
- 2 tbsp fresh coriander leaves, chopped
- 2–3 tbsp fresh cream (optional, for garnish)
- Croutons (optional, to serve)
To make spicy tomato soup in Indian style, first blanch or roast tomatoes until soft. Peel skins if desired for a smooth texture.
Heat butter or ghee in a heavy pot. Add cumin seeds, let them splutter. Add onion (if using), sauté until translucent. Add garlic, ginger, and chili; sauté for 2 minutes.
Add chopped tomatoes and cook for 3–4 minutes.
Sprinkle in turmeric and red chili powder.
Pour in stock/water and salt. Bring to a boil, then simmer for 10 minutes.
Use an immersion blender in the pot or transfer the mixture to a blender. Blend until smooth. (Optional: strain for extra silky soup.)
Return to low heat. Stir in sugar/jaggery, black pepper, garam masala, and kasuri methi. Adjust salt and spice.
Stir in cream if desired (off the heat) for creamy tomato soup. Adjust thickness with extra stock if needed.
Ladle into bowls, garnish with coriander and cream swirls, and top with croutons. Serve the tomato soup hot with bread or sandwiches.
- For natural sweetness, it is better to use ripe and red tomatoes.
- Avoid overcooking, as it may reduce the tangy flavor.
- If the tomatoes are too sour, add 1/2 to 1 teaspoon sugar.
- To get the richer taste, it is better to use homemade stock instead of water.
